Southwest Chicken and Quinoa Bowl
Ingredients:
1 Cup Quinoa
2 Cups chicken broth
Tyson Southwest Grilled Chicken
Frozen Grilled Peppers
Olive oil or Italian Dressing (just a drizzling)
Half a lime
Cilantro or tubed cilantro (in the produce section)
In the microwave cook the chicken broth and quinoa for about 6 minutes in a microwave safe dish. Fluff and continue for another couple minutes.
While the quinoa is in the microwave, heat up the onions, chicken and drizzle some Italian dressing or olive oil on top. You can stir, cover, and stir until it is warm.
When quinoa is done, mix in a dollop of the tubed cilantro or chopped cilantro, and squeeze half the lime. Stir these into the quinoa.
Serving suggestions:
Put the quinoa in the bottom of a each bowl, and put the chicken and pepper mixture on top. I then grate some cheese on top for some added yumminess.
