It's been one of those weeks... I can't even seem to get an already made crock pot meal from the freezer into the crock. It seems like it has taken all week to get back into the swing of things after being on vacation... and our house still looks like a small hurricane has gone through the inside of our home. That being said, I've been making "emergency meals" this week. Quick, easy, taste-good dinners.
Here are some things I always have on hand so that I know I can make a meal at home instead of grabbing Subway on the way home... also a delicious choice.
#1 Quinoa- There are many different dishes that can be made with this item. I use quinoa instead of rice and often make a bowl with quinoa, chicken, salsa, and top with some cheese.
#2 Pizza crust- I'm not talking dough... already made pizza crust. I buy a few 2 packs to have on hand at all times. I've had great luck with Mama Mary's (at Publix usually near the pita bread, hummus and fancy cheese)
#3 Cooked Chicken- I was in the freezer section of Walmart and felt like I hit the JACKPOT when discovering these Tyson grilled chicken. They come in a variety of flavors and are very easy to heat up in a skillet. Plus, the sodium isn't THAT bad compared to most items found in the frozen food section.
#4 Frozen Veggies- Peppers, mixed veggies, peas, carrots. All kinds are fantastic to have on hand for a quick side that can be made in the microwave.
#5 Pasta Sauce and or Diced Tomatoes- These can be used on pasta, or pizza. A very quick and easy homemade pasta sauce can be made with diced tomatoes, basil, garlic and olive oil.
