It's that time of year again... when it's time to go back to work for teachers. I'm looking forward to seeing the students, but it's like ripping a band aid off, I mean I've been enjoying stay at home mom life for 2 months, and really getting into the swing of things. So, I decided I needed to get some things in order at home to be able to feel a little more organized and confident about going back to work. Freezer Meals it is!

Greek Beef Roast: You will need: Beef Roast Pepperchinis Butter Ranch Seasoning I made 2 batches, so I split the roast and butter in half. I placed the roast, butter, ranch seasoning and about 8 pepperchinis in each freezer bag plus some pepperchini juice. I froze it and it can go in the crock pot on low all day. |
Pesto Ranch Chicken You will need: Chicken Breasts Pesto Ranch Seasoning Chicken broth Place the chicken in the freezer bag, top with about a 1/4-1/2 cup of pesto, sprinkle with ranch seasoning (1/2-a whole packet) and pour in some chicken broth. I used probably 1/2 cup of chicken broth (for 2 breasts). Freeze and cook in the crock pot on low all day. I plan to serve this on top of some pasta with some parmesan cheese. |
You can cook this in the crock pot all day and add the spaghetti when you have about 4 hrs left or just cook the pasta on the stove. It's up to you. | Cajun Sausage and Spaghetti You will need: Cajun Style Sausage Can of Fire Roasted diced tomatoes Onions Green Peppers Half and Half or Heavy Cream Spaghetti Chop the sausage and place in the freezer bag along with the can of tomatoes, a hand full of onions, handful of peppers and a drizzle of half and half. |
Rinse the beans and corn. Combine all ingredients into two freezer bags (1 chicken breast in each) Cook in the crock pot all day, shred the chicken with forks and serve with sour cream, cheese and tortilla chips. | Tortilla Soup *I split this and made 2 batches You will need: Chicken Breasts Can of black beans Can of corn Can of Cream of Chicken Soup Diced Tomatos or Rotel Onions Green Peppers Red Peppers Taco Seasoning |
**I had some extra ground turkey so I made some lasagna, and meat sauce. I also made a bag of fajita chicken with the 2 extra chicken breasts I had.
Lasagna:
You will need:
Ground turkey
Red sauce
Ricotta Cheese
Lasagna noodles
Shredded cheese
In an aluminum tin layer the sauce, meat, noodles and ricotta 3 times. (noodles do not need to be cooked). Label and freeze. This should be thawed out the day before cooking for less cook time. I usually put it in the oven for 45 min at 400 degrees.
Fajita chicken:
You will need:
Chicken Breasts
Rotel
Taco or Fajita Seasoning
Combine ingredients in a freezer bag. Cook this in the crock pot all day on low. You can add in some sliced peppers 30 min before serving. Serve on tortillas with cheese, salsa, sour cream,

Overnight Apple Cinnamon Oatmeal I'm so excited I had this epiphany. I got a little tiny crock pot, the "little dipper" at goodwill the other day. I decided "hello?!?! Why not use it for overnight oatmeal!" So, I'm going to try this recipe. I made 3 little batches. You pop them into the crock pot when you go to bed and in the morning, breakfast is ready You will need (for 1 serving) Chopped apple less then a 1/4 cup of brown sugar 1 Teaspoon of cinnamon 1 cup of old fashioned oats 2 cups of water |
