We have come to the age of trickery- and this recipe is full of it. We were at Chipotle the other day and I was sharing my chicken bowl with Cece. Suddenly she couldn't get enough of the guacamole. She kept saying "Yummy green yogurt." She ate half of my chicken bowl (as long as it had green yogurt on it) then I had to go purchase an extra side of guacamole that she just started eating with a spoon! Well, this mama decided it's time to run with this food opportunity.
Another thing besides yogurt my daughter likes is chips... what kid doesn't? Sometimes rather then battle, I've deiced to limit the chances for her to eat chips, but also, find some crunchy alternatives... all of which are probably not "healthy" but maybe a little better then potato or tortilla chips.
I was so happy to find sweet potato chips at Trader Joe's. I then made some "green yogurt" and in the end, we had "Green Yogurt Nachos"
You will need:
Sweet Potato Chips (I found them at Trader Joe's)
Avacado
Tomato
Red onion
Slice of lime
salt and pepper (to make guacamole)
(OR you can buy guacamole already made)
Cheese
Chicken

What to do:
- Dice the tomato and onion- probably a quarter to half cup of each. I did less onion and more tomato, but you want mostly avocado.
- Squish the avocado with a fork, adding in some squeezed lime juice and salt and pepper.
- Fold in the tomato and onions
- Snack on this while you make the rest!
- Cook the chicken- we did 2 small breasts in a pan with some italian dressing and seasoning) but you can use pre cooked chicken from the freezer section too.
- Lay the chips on the plate, top with cheese and chicken.
- Place in the microwave for 45 seconds to a minute.
- Take it out and top with your green yogurt
- Boom! done! YUM!
